Carolina Kitchen was founded in 2002 by Clay and Jo Cobb. The dream all began when a charming Georgia boy married, a sweet Nevada farm girl. He always complained about her cooking and wanted real southern food, like he had growing up as a child. Therefore, they had two children, and out of retaliation, Jo sent their kids to Culinary school. Both Clay and his sister Rachel went to Johnson & Wales University in Providence Rhode Island, one of the most prestigious culinary schools in the United States. After college Clay worked for many fine dining restaurants, country clubs and casinos, before deciding to go out on his own. Carolina Kitchen was opened officially in May of 2002 with a very basic menu. Entrees included: Pulled Pork, Catfish, Ribs, Chicken Wings and sides that included: Coleslaw, Pork and Beans and French Fries. Throughout the first couple of years the menu has expanded with the help Clay's father. He was the taste tester for all entrees, deserts, sauces and rubs. As an important part of setting itself apart for the competition, Carolina Kitchen smokes all of their meat. They have 11 of own recipes, and manufacture all of their own sauces and rubs locally.
