Phil knew he could make a chicken taste better by cooking it over an open flame rather than frying it, so he began to experiment at his backyard rotisserie pit stacked with hickory wood. Meanwhile, Jeanette perfected her recipes for the first three side dishes: Twice Baked Potatoes, BBQ Beans, and Creamy Coleslaw. Eventually, they developed recipes that would have been the envy of any cowboy! With the help of his partner, Elias Sacal, Phil moved from his backyard to a tiny strip center, and from there he launched Cowboy Chicken in August of 1981. Cowboy Chicken's unique, real-wood roasting and great tasting side dishes created an instant success for its business.
