At Ironwood BBQ we take our smoking serious. Our 100% oak wood fired BBQ food is some of the finest in the Bay Area. We dry-rub and then slow cook beef brisket, port roast, chicken and ribs in our unique custom-built Wham Turbo BBQ Pit from Memphis, Tennessee. Built by John Willingham, only three Wham Turbo BBQ Pits exist on the West Coast - Los Angeles, Seattle and in San Francisco at Ironwood. In 1971, John H. Willingham began searching for the best available method for cooking BBQ. Unsatisfied with what he found, he conceived the Wham Turbo Cooker and began mixing his own dry rubs and sauces. Then in 1982, John decided to put his cooking method, seasoning and sauce to the test in Memphis at the May International BBQ Festival. His Team, "The River City Rooters", won first place in Ribs, and was named the Overall World's BBQ Grand Champion. The next year, at the Kansas City American Royal BBQ contest, John was awarded 1st place Pork, 1st place Beef, 1st Place Lamb, and you guessed it — Over Grand Champion. John's Team, "The River City Rooters", has won over 70 first places and grand champion awards since 1982. Nobody has won more first places and grand champion awards than John Willingham! John's cooking method has been featured by Bobby Flay, on the Food Network and John has been recognized by the Smithsonian Library as an icon of American traditional barbecue cooking. In order to "get John's cooking methods right", Shelton Randings traveled to the West Coast for the first time to personally train Wayne Kauppi (the pit master at Ironwood BBQ) in John's special techniques. Being John's right hand man on "The River City Rooters" since 1982, Shelton has participated in every major cook-off with John. Shelton and Wayne spent seven days cooking meats and testing dry ribs to assrue John's award wining cooking method could be nejoyed in San Francisco.
