James Robert Carpenter President and CEO A native of Southern California, Jim started working for restaurants at the age of 13. He worked his way up getting to know all aspects of the industry with responsibilities including dishwashing, prepping, meat cutting, cooking, bussing, waiting tables, head waiting and training. He has also been a short order cook, coffee house manager and received training from the restaurant management program at Orange Coast College. Jim has a special affinity for water: swimming, diving and water polo in high school, and he was a California Lifeguard for 14 years. In the past he has worked as an ice-skating teacher and caretaker of horses on a ranch. In his off time, among other things, Jim enjoys fishing, boating, jetskiing, target shooting, diving for lobsters off the coast of Catalina Island, a nice glass of port and a good cigar. Jim built this business from the ground up, with practical sense, a need to be of service and good old-fashioned hard work. He personally ensures that our strict quality assurance policies are working. Jim currently serves as the President and CEO of Key Lime West, Incorporated, overseeing all production, quality assurance program, preventive maintenance program, tooling, purchasing, shipping, acquisitions, employee relations, and research and development at the bakery. Shannon McDonough Carpenter Vice President and CFO Born and raised in the Pacific Northwest, Shannon grew up in the service industry. After moving to Southern California in her early teens, she began working for restaurants at the age of 15. Her responsibilities have included hosting, waiting tables, head waiting, training, banquet coordination, sales and marketing, restaurant consulting and other entrepreneurial endeavors including catering business development. She received her AA degree with Honors in general education from Goldenwest College, and is currently working towards a Bachelor's degree from California State University Long Beach. Her father is the author of The Irish Chef Cookbook in which her secret recipe for chocolate chip cookies is divulged. Shannon finds great joy in helping children and has taught ballet and aided in kindergarten and third grade classrooms. She is a past Helping Hands Chair for the largest mom's group in Long Beach, Moms Helping Moms. She taught three-year-olds in Sunday School for 3 years and is currently the Early Childhood Religious Education Director and the past Chairman and current member of the Safeguard the Children Committee at St. Joseph Parish in Long Beach. Shannon is a certified facilitor for the Virtus Protecting God's Children Adult Awareness Session. Her mother is an accomplished artist and Shannon had a brief stint in the art field as a sculptor
