In 1981, the first La Bou store opened its doors. It was an astounding success. Each day hundreds of eager customers would line up, sometimes even in the rain, for a chance to purchase owner Trong Nguyen's handmade croissants. Since those early days, La Bou Bakery Cafe has expanded to 26 company-owned stores and franchised units all serving delectable croissants and strong, aromatic espresso drinks, in addition to pastries, soups, salads and sandwiches. Inspired in 1988 by the success of La Bou, Trong Nguyen collaborated with chef Mai Pham to launch Lemon Grass Restaurant, a full service restaurant featuring the exciting and vibrant cuisines of Vietnam and Thailand. Mai's innovative approach to cooking, coupled with her efforts in food writing and teaching has earned Lemon Grass the reputation of being one of the best southeast Asian restaurants in the United States.
