Vegetable Juices, Inc. (VJI) is a food manufacturer dedicated to processing premium natural vegetable flavorings. VJI was founded in 1928 by Dr. Dominic Rolle, a charter member of the Institute of Food Technology. Dr. Rolle believed that many of the savory characteristics of vegetables were lost during the dehydration process. Vegetable Juices Inc. was originally created to offer a line of fresh vegetable juices as an alternative flavor system to dehydrated vegetables and spices. Many of the original products created by Dr. Rolle including Garlic Juice and Onion Juice are still widely used to flavor food products.Now, VJI’s product lines expand beyond juices with the addition of vegetable purees and diced vegetables. Vegetable purees are made from milling the entire vegetable. Purees have the fresh top notes of juice while offering some of the deeper flavors that are contained in the fibers of the vegetables. Purees also offer the fiber and mouth feel that fresh juices do not have. Diced vegetables are made from dicing fresh vegetables and preserving them in a brine system. Diced vegetables offer the flavor and texture of fresh vegetables.As a result of many customer requests for custom processing and product development, Vegetable Juices, Inc. offers a line of flavor blends. These flavors and blends were created as a direct result of our commitment to our customers to satisfy and meet their needs.
