In reviewing the questions submitted to this column in the past, I find that there are more that concern fudge than any other type of candy. Looking back over years of projects for U.S. companies, it struck me that my very first project concerned starch-cast fudge, and current projects with two major clients are related to the production of fudge. Perhaps this is because fudge is an especially American type of candy, and is made by so many confectioners. The most recent inquiry was a lengthy letter from a small manufacturer of goat’s milk fudge.

With their numerous innovations, packaging producers and machinery manufacturers have adjusted to the new requirements in the confectionery and baked goods sector. Manufacturers willing to invest have plenty to choose from among all the new packaging and more efficient machine solutions. At the upcoming interpack trade fair, they can experience it for themselves.

When Al Richards’ owner, Fred Stancampiano, launched a new website www.alrichardschocolates.com, "The web builder we hired informed us from the start that it would be impossible to deliver effective results unless we hired a photographer to shoot our gift products. The designer maintained that the images (except stock photos for bulk) had to be custom photographed to represent our unique packaging.
