Mexican Spoon Bread (One of our family's favorite foods!!) If you like spicy, add fresh jalapeno or pepperocini. If you like mild, add 1 small can of chopped green chili's, fresh mushrooms and frozen green peas/corn. 1 can cream corn 1 generous cup corn meal 3/4 cup milk 1/4 oil 2 eggs 1 tsp soda 1/2 tsp salt 3/4 cup cheddar cheese 1 fresh chopped jalapeno chili and/or 3-4 chopped pepperocini (pickled salad peppers) Mix well and sandwich cheese and peppers between layers of batter. (Batter will be runny; don't worry!) Optional: mushrooms, frozen green peas or corn. Baking time: 15 minutes at 375 degrees, then 40 minutes at 350 (About an hour at 350 - cover if top gets too brown.) Vegetable Garden Sushi (This must be a very healthy meal... Also you can use any kind of pasta instead of rice, but if you use pasta, you need your favorite salad dressing.) 3 cups cooked rice 1 package of sushi mix (If you don't have mix, you can use rice vinegar and sugar) Mix well and wait for rice to cool. Use a big plate for sushi. 1/2 cup chopped celery 1/2 cup chopped carrot 1/2 cup chopped tomato 1/2 cup alfalfa sprouts 1/2 cup spaghetti squash (steamed) 1/2 cup cucumber 4 chopped mushrooms 3 leaves chopped lettuce Sprinkle the chopped vegetables on the rice plate, then think of a color and make your own original garden using many vegetables, It'll be a pretty big dish! Actually, you can use any kind of your favorites fresh vegetables --- Try your own new style!! --- Apple butter cake 1/3 cup water 125g butter or margarine 1/2 tsp. vanilla 3 eggs 1 1/2 cup flour 1/2 tsp. baking powder 2 fresh apples, sliced thinly (Optional...1/2 tsp cinnamon and raisins) 1 cup sugar 1) Mix sugar and water well, using a pot on the stove. (Don't boil.) 2) Melt butter and whisk until light, then add egg yolks and mix well. 3) Add vanilla to 1 and 2; mix well. 4) Add flour and baking powder, mixing lightly. 5) Beat egg whites to medium peaks. 6) Mix 4 and 5 quickly (don't stir too much). 7) Sandwich apples between layers of batter in a greased and floured loaf pan or round pan. 8) Bake at 360 degrees for 45-50 minutes. Blueberry Muffins (These muffins are not too sweet, but tasty) 2 cups flour 1/2 cup sugar 3 tsp baking powder 1/2 tsp cinnamon 1/8 tsp salt ...................mix well, then add: 1 egg 3/4 cup milk 1/3 cup oil 1 teaspoon vanilla 1 cup frozen blueberries (do not thaw) Pour into muffin cups, filling each 2/3 full. Bake 10 to 15 minutes at 400 degrees. Cream cheese pound cake (This recipe is from Martha, a friend of ours who is an excellent cook. This cake was great!!) 8 oz. cream cheese 3 sticks butter or margarine 3 cups sugar dash of salt 1 1/2 teaspoons vanilla 6 eggs 3 cups flour Cream butter, cream cheese, sugar. Add salt, vanila, and blend well. Add eggs, one at a time. Stir in flour. Pour into greased and floured loaf pans and bake 90 minutes at 325 degrees. Cabbage Sauté (This is a tasty but easy side dish) 1 cabbage (chopped) 1 piece of garlic (chopped) 1/2 onion (chopped) 1 teaspoon salt 1/2 teaspoon paprika 1 cup sour cream (Optional: 3 chopped sausages) Sauté garlic and onion in a small amount of oil; add cabbage, salt, and paprika; cook until soft.
