Based in France in the south of Normandy and founded in 1948, Michel Cluizel remain a family business and are one the largest independent producers of fine chocolate from the bean to the finished bar. Cluizel have connections with plantations all around the world, including Sumatra, Venezuela, Ghana, Java, and the Ivory Coast. From these they blend the chocolate used in their bars and confections. Michel Cluizel is a stout defender of quality chocolate, declining to use soya lecithin at all in their chocolate and recently launched their ‘Ingrèdients Noble’ label to highlight the quality of cocoa, sugar and vanilla used.

Amano is dedicated to creating some of the world's most exquisite single origin chocolate through traditional techniques. Amano means "by hand" and "they love" in Italian, and that describes the care and perfection that Amano brings to chocolate and in turn to the people who savor it. That is why it is also called artisan chocolate. Amano Chocolate sources only the world's very best beans and ingredients. Amano visits the plantations, buys from the growers, and when necessary works with them to improve their skill in properly growing, fermenting and drying the cacao beans to meet Amano exacting standards. Based in Woodbridge, VA, Potomac Chocolate was founded in 2010, and is the first bean-to-bar chocolate maker in the Washington, DC area. From Potomac’s workshop, they make their fine chocolate using a traditional, artisan approach. Hand-crafting every bar, Potomac Chocolate works to coax out only the best flavors from the cacao bean in every step of the process—from roasting, cracking and winnowing the cacao beans, refining and conching, to tempering and molding the final bars. In order to highlight the beans’ flavor, their chocolate is made from the bare minimum of ingredients: cacao beans and sugar, with no added vanilla, cocoa butter or emulsifier.
